Black-eyed peas are a southern New Year’s Day tradition thought to bring prosperity in the coming year. Serve this sweet-and-smoky side with brown rice or a square of cornbread and a sprinkling of chopped fresh parsley.

Method
Heat a medium pot over medium heat.
Add onion, celery, smoked paprika, chile flakes and 1/2 cup water.
Cover and cook over medium heat until onion is soft, about 10 minutes.
Add garlic and salt, and cook for another 2 minutes, until soft.
Add black-eyed peas and 2 1/2 cups water.
Cover and simmer until peas are tender, about 1 hour.
Add tomatoes during the last 5 minutes of cooking.
