There’s probably no sandwich as universally loved as the grilled cheese, a comfort classic that never seems dated. Here’s our simple recipe for a drop-dead delicious one: We brush the outside of the sandwich with mayonnaise to help it get a wonderfully crispy, browned crust, a great counterpart to the soft, gooey cheese inside. Perfection!

Method
Layer 2 slices of bread with the cheese, keeping it a bit away from the edges so it won't melt out.
Top with remaining bread slices, then use a pastry brush or butter knife to coat the outsides of each slice of bread with a layer of mayonnaise.
Heat butter over medium heat in a large heavy skillet.
Swirl the pan a few times to evenly coat the bottom.
When butter has melted, add sandwiches and cover skillet.
Cook until bottoms are nicely browned and crisp, 3 to 4 minutes.
Flip sandwiches and cook, uncovered, until the other side is browned and cheese is melted, 3 to 4 minutes longer.
Use a serrated knife to cut each sandwich in half and serve immediately.
Fun additions to your grilled cheese:
-roughly chopped pepperoncini or peppadew peppers
-a few slices of ham
-sliced tomatoes and a sprinkle of crumbled feta or blue cheese
-a pile of sautéed spinach
-a swipe of tart cherry or plum jam
