Ice Cream Sandwiches

Few things take your mind off the summer heat faster than an ice cream sandwich. In our homemade version, frosty ice cream or frozen yogurt is lavishly layered between two of your favorite cookies, creating an irresistibly delicious summertime treat.

Ingredients

    2 cupsice cream or sorbet (such as mint chocolate chip, raspberry, coffee, or butter pecan)
    8(3- to 4-inch) cookies (such as snickerdoodle, chocolate chip, oatmeal or peanut butter)

Method

Soften the ice cream or sorbet for about 10 minutes, or until it is easy to scoop.


Top 4 cookies with 1/2 cup ice cream each, then top with the remaining cookies, pressing slightly to form sandwiches.
