Mango-Cucumber Salsa

Try this fresh, lightly sweet salsa as a topping for grilled or broiled fish, chicken or tofu. We recommend leaving the seeds in the jalapeño for more kick, but you can remove them before chopping the pepper for milder flavor.

Ingredients

    1mango, finely diced
    1/2cucumber, seeded and finely diced (about 3/4 cup)
    Zest and juice of 1/2 lime, or to taste
    1/3 cupchopped fresh cilantro
    1/4 smallred onion, diced
    1jalapeño pepper, finely chopped

In a medium bowl, combine mango, cucumber, lime zest, lime juice, cilantro, onion and jalapeno.
