Mashed Potatoes with Garlic

Looking for the perfect recipe for rich, fluffy mashed potatoes? This side dish, garnished with fresh herbs, is ideal to serve alongside roasted turkey or chicken.

Ingredients
- 2 pounds Yukon gold or red potatoes, cut into 1½-inch chunks
- 4 garlic cloves
- 4 sprigs thyme
- 1 bay leaf
- 1 cup milk or half-and-half, warmed
- 1/4 cup extra-virgin olive oil
- 1/2 teaspoon fine sea salt
- 1 tablespoon chopped fresh parsley and/or chives
Method
In a large saucepan, cover potatoes, garlic cloves, thyme and bay leaf with salted water and simmer over medium heat until fork-tender, about 20 minutes.
Drain thoroughly and return to pan, discarding thyme sprigs and bay leaf.
Set the pan over medium heat and add milk and olive oil.
Mash with an old-fashioned potato masher or large fork.
Season with salt. Transfer to a serving dish and garnish with parsley.
