Ingredients

    1 (16-ounce)tube prepared polenta
    1 (6-ounce)log fresh goat cheese (also known as chèvre)
    1 cupprepared marinated mushrooms, chopped
    8sundried tomatoes packed in oil, drained and thinly sliced
    8fresh basil leaves, thinly sliced

Method

Prepare a grill for medium heat cooking. 


Slice prepared polenta into rounds and lightly grill on both sides, about 2 minutes per side. 


Top with softened goat cheese and marinated mushrooms. 


Garnish with sundried tomatoes and basil.
