Crisp, bright and refreshing, this salad satisfies with creamy avocados and goat cheese, roasted pumpkin seeds, mild black olives and tangy lime juice.

Ingredients

    1/2 cupgoat cheese crumbles
    1/3 cuproasted, salted pumpkin seeds (pepitas)
    1/4 cupchopped fresh cilantro
    3 tablespoonslime juice
    1 cup365 Organic Tortilla Strips (optional)
    1 largeripe avocado, diced
    1head romaine lettuce, chopped
    1/4 cupsliced pitted black olives
    1/2 teaspoonkosher salt
    1/2 cupchopped radish (about 3 medium)
    1 tablespoonextra-virgin olive oil

Method

In a large salad bowl, use a fork to smash avocado with salt. Stir in lime juice and olive oil.


Add lettuce and toss to combine, then add goat cheese, cilantro, olives and pumpkin seeds.


Divide among salad plates and top with tortilla strips (if using) to serve.
