Miso Salad Dressing

White miso is the most mild and sweet tasting miso and here it blends with tofu to form the creamy silken texture of this dressing, perfect for salads. It's great drizzled on steamed vegetables, potatoes and pasta as well.

Ingredients
- 1/2 pound extra-firm tofu, drained
- 1/2 cup roughly chopped yellow onion
- 1/4 cup cider vinegar
- 1/4 cup chopped fresh flat-leaf parsley
- 1/4 cup extra-virgin olive oil
- 1/4 cup white miso
Method
Put tofu, onions, vinegar, parsley, oil, miso and 1 cup water into a food processor or blender and process until smooth and creamy.
Store in an airtight container in the refrigerator.
