This delicious guacamole is creamier and fluffier than most versions, making it a terrific sauce for grilled or roasted salmon, chicken breasts, or cauliflower or tofu steaks. But you can also use it as a dip for veggies or to add an intriguing touch to Mexican favorites.

Method
Combine avocados, cilantro, lime juice, green onions, garlic, jalapeño and salt in a food processor and process until fairly smooth, about 1 minute, scraping down sides of the food processor as needed.
With the motor running, pour in 1/2 cup cold water.
Guacamole should be fluffy and pourable; add more water 1 tablespoon at a time if needed.
