Old-Fashioned Ham Loaf

Studded with chopped ham and sweet carrots and onions, this pork meatloaf is terrific served cold on sandwiches. Make this with the holidays’ leftover spiral sliced ham.

Ingredients
- Olive spray oil
- 1/2 cup dry whole wheat bread crumbs
- 1/4 cup low-fat milk
- 1 pound ground pork
- 1 pound trimmed ham, finely ground in a food processor
- 1/4 teaspoon fine sea salt
- 2 medium carrots, grated
- 1 medium yellow onion, finely chopped
- 2 stalks celery, finely chopped
- 2 eggs
- 1 tablespoon honey
- 1 tablespoon Dijon mustard
Method
Preheat the oven to 350°F. Spray a 9x5-inch loaf pan with oil; set aside.
In a large bowl, combine bread crumbs and milk.
Add pork, ham, salt, carrots, onion, celery and eggs, and mix until well combined.
Transfer to the prepared pan and firmly pat into a loaf shape.
In a small bowl, stir together honey and mustard, and spoon over the top.
Arrange loaf pan on a large rimmed baking sheet.
Bake until cooked through, firm and golden brown, about 1 1/4 hours.
Allow to cool for 20 minutes, and then carefully turn out onto a plate. Slice and serve.
