Orange Mashed Sweet Potatoes

Orange Mashed Sweet Potatoes

These potatoes are sweetened with brown rice syrup, which is subtle in its level of sweetness and mashed with orange juice and zest. If you like, add a drizzle of maple syrup.

Ingredients

    3 1/2 poundssweet potatoes, peeled and cut into large chunks
    1/2 cupbrown rice syrup
    Zest and juice of 1 large orange (about 1/4 cup juice)
    1 teaspoonlemon juice
    3 tablespoonsunsalted butter
    1/2 teaspoonfine sea salt, plus more as needed

Method

Place sweet potatoes in a large pot. Cover with water and boil for 25 minutes, or until tender. Drain and set aside.


Meanwhile, combine brown rice syrup, orange zest, orange juice, lemon juice and butter in a saucepan.


Bring the mixture to a boil over high heat and cook about 2 minutes or until syrupy. Remove the pan from heat.


Mash sweet potatoes with orange mixture and season with salt. Serve warm.
