Parsley Toasts with Caviar

Make any day of the week a special occasion with these light, elegant appetizers. Flutes of sparkling wine are just the right accompaniment.

Ingredients
- 4 slices sandwich bread, crusts removed
- 2 tablespoons unsalted butter, melted
- 2 tablespoons finely chopped fresh parsley
- 5 teaspoons black caviar
- 1 tablespoon crème fraîche (or sour cream)
- Chopped fresh chives, for garnish (optional)
Method
Brush bread lightly with melted butter and toast until golden brown. Let cool and cut each toast slice into 3 serving-size rectangles to make 12 total.
Place parsley on a flat plate. Brush toast edges with remaining melted butter then roll in parsley to lightly cover all edges.
Top each rectangle with a dollop of crème fraîche (or sour cream), a dollop of caviar and chopped chives. Serve immediately.
