Ingredients

    6yellow new potatoes, halved
    2 tablespoonsextra-virgin olive oil
    1/2 teaspoonfine sea salt
    1/4 teaspoonground black pepper

Method

Place potatoes in a medium pot filled with salted water. Cover and bring to a boil over medium-high heat.


Reduce heat and simmer 8 to 10 minutes, or until potatoes are fork-tender.


Drain potatoes and place in a bowl.


Drizzle with oil and season liberally with salt and pepper.


Serve immediately or cover with foil to keep warm.
