Pineapple and Cilantro Baked Salmon

The lively flavors of pineapple juice, miso and cilantro make a delicious complement to baked salmon. Serve with steamed rice or pasta and green beans.

Ingredients

    4(6- to 8-ounce) salmon fillets
    1 tablespoonmellow white miso
    1 cuppineapple juice, divided
    1 tablespoonextra-virgin olive oil
    1 tablespoonbrown sugar
    1/2 teaspoonground turmeric
    1jalapeño pepper, finely chopped (optional)
    1/2 cupchopped fresh cilantro
    1/4 teaspoonfine sea salt
    1/8 teaspoonground black pepper

Method

Preheat the oven to 400°F.


Place salmon in a baking dish and set aside.


Put miso in a medium bowl.


Add 2 tablespoons pineapple juice and stir to dissolve miso.


Stir in remaining pineapple juice, oil, brown sugar, turmeric, and jalapeño.


Pour over the salmon.


Season the fish lightly with salt and pepper.


Bake until salmon flakes easily and the flesh is opaque, 15 to 20 minutes.


Garnish with chopped cilantro.
