Pineapple-Ginger Chutney with Macadamia Nuts

Ingredients

    1 poundfresh pineapple, diced
    1/2 cupdiced red bell pepper
    1/2 cupdried currants
    1 smallshallot, chopped
    2 tablespoonsminced fresh ginger
    2 tablespoonsbrown sugar
    1lemon, juice of
    1cinnamon stick
    1/4 cuphoney
    2 tablespoonswhite wine vinegar
    1/4 cupchopped macadamia nuts

Method

Combine the pineapple, red pepper, currants, shallot, ginger, brown sugar, lemon juice, cinnamon stick, honey and vinegar in a medium saucepan. 


Bring to a simmer and cook until the liquid has evaporated and the mixture is thick, about 20 minutes. 


Remove from the heat and stir in macadamia nuts. 


Serve warm or cold.
