Pineapple Teriyaki Beef

Look for Asian-style stir-fry vegetables, already cut and ready to go, in the frozen foods section. Paired with juicy steak and teriyaki sauce, this is a quick meal to easily prepare on busy week nights.

Ingredients

    1 tablespooncanola oil
    2 clovesgarlic, crushed
    1 poundboneless chuck steak, cut into 1/8-inch slices
    2/3 cupprepared low-sodium teriyaki sauce
    1 can (20-ounce)pineapple chunks, with juice
    1 1/2 cupsfrozen Asian-style stir-fry vegetables
    3green onions, chopped
    2 cupsfrozen cooked jasmine or brown rice, prepared according to package directions

Method

In a large skillet, heat oil over medium high heat; add garlic and sliced steak. 


Cook until garlic is golden and meat is seared on the outside, about 4 minutes.


Reduce heat to low; add teriyaki sauce, pineapple and 1/4 cup of its juice. 


Simmer until the pineapple has softened slightly, about 10 minutes. 


Add vegetables and green onions and cook until onions are heated through, about 5 minutes. 


Serve over prepared rice.
