Pomegranate-Basil Dressing
Makes about 1 cup

Enjoy this dressing with greens or drizzled over grilled chicken or meats, especially lamb.

Ingredients
- 1/2 cup extra-virgin olive oil
- 1/4 cup unsweetened pomegranate juice
- 1 tablespoon lemon juice
- 6 large fresh basil leaves or 1 teaspoon dried basil
- 1/2 teaspoon Dijon mustard
- 1 clove garlic, crushed
- 1/4 teaspoon fine sea salt
Method
In a blender, combine oil, juices, basil, mustard, garlic and salt, and process until smooth.
Taste and adjust seasoning, if needed.
Use dressing immediately or cover and refrigerate.
