Potato and Carrot Kugel

Cut this potato-based kugel into squares and serve as a side dish at brunch, lunch or dinner.

Ingredients
- 6 large Russet potatoes (about 4 pounds), peeled and grated
- 4 carrots, grated
- 1 large onion, finely chopped
- 3 large eggs, beaten
- 6 tablespoons matzoh meal
- 2 tablespoons chopped fresh flat-leaf parsley
- 1 3/4 teaspoon fine sea salt
- 3/4 teaspoon ground black pepper
- Canola oil, for pan
- 1 1/2 teaspoon paprika
Method
Preheat the oven to 375°F.
In a large bowl, combine potato, carrots and onion.
Stir in eggs until well mixed.
Stir in matzoh meal, parsley, salt and pepper.
Pour into an oiled 9x13-inch pan and sprinkle with paprika.
Bake 1 hour or until browned.
