Method
Preheat the oven to 350°F.
Combine cornmeal, baking powder, and salt in a bowl.
Make a well in the center of the mixture.
Place beaten eggs, canola oil and creamed corn into well.
Using a whisk, combine ingredients.
Add pumpkin and ricotta cheese, and mix until well blended.
Stir in red onion, poblano chilies, ginger and garlic.
Oil a 13x9-inch glass baking dish with canola oil.
Pour batter into the dish and spread it evenly.
Bake until the mixture is set, but still soft, about 45 minutes.
