What to make with leftover chicken from last night? Making chicken nuggets for the kids' lunch? Prepare some extra for this dinner-sized Caesar salad, packed with crisp lettuce and garbanzo beans. Add carrots and sliced bell peppers for extra color.

Ingredients

    1 cupshredded or diced cooked chicken
    1head romaine lettuce, torn into bite-size pieces
    1 can (15-ounce)garbanzo beans (also called chickpeas), rinsed and drained
    1/4 cupprepared Caesar dressing
    2 tablespoonsfresh lemon juice or red wine vinegar
    1 clovegarlic, finely minced
    1/4 teaspoonkosher salt
    1/4 teaspoonground black pepper
    2 tablespoonsgrated Parmigiano Reggiano

Method

In a small bowl, combine drained garbanzo beans with vinegar, garlic, salt and pepper. Let sit for 30 minutes to marinate.


In a large bowl, combine chicken, lettuce, marinated beans and dressing.


Toss to combine, then garnish with cheese before serving.
