Quick Chicken and Garbanzo Bean Caesar Salad

What to make with leftover chicken from last night? Making chicken nuggets for the kids' lunch? Prepare some extra for this dinner-sized Caesar salad, packed with crisp lettuce and garbanzo beans. Add carrots and sliced bell peppers for extra color.

- 1 cup shredded or diced cooked chicken
- 1 head romaine lettuce, torn into bite-size pieces
- 1 (15.0-ounce) can garbanzo beans (also called chickpeas), rinsed and drained
- 1/4 cup prepared Caesar dressing
- 2 tablespoons fresh lemon juice or red wine vinegar
- 1 clove garlic, finely minced
- 1/4 teaspoon kosher salt
- 1/4 teaspoon ground black pepper
- 2 tablespoons grated Parmigiano Reggiano
Method
In a small bowl, combine drained garbanzo beans with vinegar, garlic, salt and pepper. Let sit for 30 minutes to marinate.
In a large bowl, combine chicken, lettuce, marinated beans and dressing.
Toss to combine, then garnish with cheese before serving.
