Samoan-Style Green Bananas in Coconut Sauce

This recipe is based on fa’alifu fa’i, a ubiquitous side dish in Samoa. It’s deliciously mild, but you can also serve the bananas with lime wedges, cilantro or chili-garlic paste. Inspired by Whole Planet Foundation® microcredit client recipes.

Ingredients
- 6 green (unripe) bananas, peeled
- 1 (13.5-ounce) can coconut milk
- 1/2 medium yellow onion, diced
- 1/4 teaspoon fine sea salt
Method
Fill a large pot 2/3 full with water and bring to a boil.
Add bananas and boil until they are just soft when pierced with a knife, about 5 minutes. Drain bananas well. Set aside.
Add coconut milk, onion and salt to the same pot and bring to a boil. Lower heat to a simmer and add bananas.
Cook, uncovered, until coconut milk thickens and bananas begin to break into large pieces, about 10 minutes. Serve warm.
