Method
Toast millet in a medium saucepan over medium heat, stirring often, until fragrant and a shade darker, 3 to 4 minutes.
Carefully add broth, lentils and garlic and bring to a boil.
Lower heat to medium-low, cover and simmer until millet is tender and lentils are creamy, about 25 minutes.
Uncover, stir in coconut milk and simmer gently until creamy and thick, about 5 minutes more.
The porridge will keep refrigerated in an airtight container for up to 3 days or in the freezer for up to 3 months.
