Peanut brittle is easy to make and super tasty with this simple recipe. No need to pull out a candy thermometer; just watch the sugar carefully as it cooks and work quickly while adding the nuts and seeds.

Method
Butter a large baking sheet or a silicone baking mat fitted into a baking sheet.
Butter a silicone spatula.
In a medium saucepan, combine sugar and 1/2 cup water and heat over medium heat, stirring frequently, until sugar dissolves, about 10 minutes. If needed, brush sides of the pan with water to push down any crystallized sugar.
Increase heat to medium-high and bring to a boil.
Cook, without stirring and watching carefully, until mixture is dark amber, about 5 minutes.
Remove from heat and stir in peanuts, poppy seeds and sesame seeds.
Using the buttered spatula, quickly spread mixture in an even layer on the prepared baking sheet.
Let cool completely. To serve, break into bite-size pieces.
