Shortcut Sloppy Joes

At the end of a long day, comfort food feels spot on for kids and adults alike – bonus points for having dinner on the table in less than 30 minutes. This easy version of classic sloppy Joes, which uses prepared pasta sauce as a flavoring shortcut, is full of lean ground beef and savory onions.

- 1 tablespoon extra-virgin olive oil
- 1 yellow onion, chopped
- 1 red bell pepper, chopped
- 2 cloves garlic, finely chopped
- 1 1/4 pound lean ground beef
- 2 cups prepared pasta sauce
- 2 tablespoons cider vinegar
- 1 1/2 tablespoon Worcestershire sauce
- 1 tablespoon firmly packed dark brown sugar
- Ground black pepper to taste
- 4 hamburger buns, toasted
Method
Heat oil in a large skillet over medium heat.
Add onion and bell pepper and cook, stirring occasionally, until they begin to soften, about 5 minutes.
Add garlic and cook, stirring occasionally, for 1 minute.
Add ground beef and cook, breaking up with a wooden spoon, until browned and cooked through, about 7 minutes.
Add pasta sauce, vinegar, Worcestershire sauce, brown sugar and pepper and stir to combine.
Bring to a simmer, lower the heat to low and cook until slightly thickened, about 5 minutes.
Spoon beef mixture onto hamburger buns and serve.
