Spoon cooked barley into soups or stews or use it to make hot breakfast cereals and grain salads. Cooked barley can be stored in the refrigerator for up to 3 days.

Method
Put barley in a large bowl and cover by 1 inch with water. Cover bowl and set aside to let soak for 8 hours or overnight.
Drain barley and transfer to a medium pot. Add 1 cup water and bring to a boil. Reduce heat to medium low, cover and simmer until water is absorbed and barley is tender, 15 to 20 minutes. Add more water if needed.
Serve immediately or store cooled barley in an airtight container in the refrigerator for up to 3 days.
