Simple Grilled Beef Short Ribs

English-style beef short ribs can be grilled up for a terrifically rich and flavorful steak experience. Slice the ribs from the bone yourself or ask your butcher to cut boneless rib steaks. Watch our how-to video.

Ingredients
- 2 pounds boneless English-style beef short ribs, trimmed of excess exterior fat (about 4 pounds bone-in ribs)
- 3/4 teaspoon coarse sea salt
- 1 teaspoon ground black pepper
Method
Prepare a grill for medium heat cooking.
Sprinkle ribs on all sides with salt and pepper.
Grill ribs, flipping them frequently, until browned and cooked to desired doneness, about 15 minutes total for medium-rare; watch carefully and move ribs to a cooler part of the grill if you have flare-ups.
Transfer ribs to a cutting board and let rest for 5 minutes before thinly slicing against the grain.
