Smoked Salmon and Vegetable Pasta Salad

The rich, savory flavor of smoked salmon is the perfect complement to springtime pasta dishes. Olives, artichoke hearts and baby spinach lend a Mediterranean vibe.

Ingredients

    1/4 cupwalnut oil
    1/4 cupextra-virgin olive oil
    1/3 cupwhite wine vinegar
    1shallot, finely chopped
    1 clovegarlic, finely chopped
    1 1/2 teaspoonsDijon mustard
    1 teaspoondried basil leaves
    Salt and pepper, to taste
    1 pounddried whole wheat penne pasta
    4 ouncessmoked salmon, cut into bite-size pieces
    1 can (14-ounce)artichoke hearts, drained and chopped
    1/2 cuppitted Kalamata olives, chopped
    1 cuppacked baby spinach, chopped
    2 tablespoonsfinely chopped fresh chives
    1/4 cupchopped fresh flat-leaf parsley
    1/2 cupgrated Parmesan cheese

Method

Put oils, vinegar, shallots, garlic, mustard, basil, and salt and pepper into a bowl and whisk to make a dressing. Set aside.


Cook pasta according to package directions.


Drain well and transfer to a large bowl.


Add 2 tablespoons of the reserved dressing and toss to coat.


Add salmon, artichoke hearts, olives, spinach, chives, parsley and cheese, pour on remaining dressing and toss well.


Season with salt and pepper and serve.
