Sparkling Honey Lemonade in Citrus-Salt Rimmed Glasses

Tangy citrus salt elevates lemonade to new heights in this refreshing drink. A mild honey such as orange blossom would be a good choice to complement the lemon juice.

- 1 cup lemon juice
- 1/2 cup honey
- 6 cups sparkling or still water, chilled
- 1 lemon, zest of
- Coarse sea salt, for rimming glasses
- Lemon wedges, for serving
- Ice cubes, for serving
Method
Combine lemon juice and honey in a small saucepan. Set over medium heat and warm, stirring until honey is completely blended with juice.
Refrigerate until cold, at least 1 hour, then stir and transfer syrup to a large pitcher. Add sparkling water and stir to combine.
In a small dish, stir together lemon zest and salt. Rub the rim of 8 glasses with lemon wedges.
Invert each glass into the dish of salt and turn to coat the rim. Fill glasses with ice and pour in lemonade.
