Method

To a Bundt pan, add ginger ale until ⅓ full (about 2 cans). Arrange sliced apples, orange, cranberries, fresh herbs and star anise in the pan. Freeze overnight.

In a large pitcher, combine 1 bottle of apple juice, lemon juice, bitters and cinnamon sticks. Stud 3 cloves in each slice of orange, then add to the pitcher. Refrigerate overnight.

When ready to serve, remove studded orange slices and add juice mixture to a punch bowl along with the remaining bottle of apple juice and bourbon (if using). Slowly stir in ginger ale to combine.

To remove ice ring, dip bottom of pan in warm water for a few seconds. Carefully invert over a large plate and tap on bottom of pan to release.

Flip the ice ring over and place in punch bowl with prepared punch to serve. As your punch sits, it’s a good idea to take a ladle of punch from the bottom of the bowl and pour it over the ice ring to ensure everything is mixed well.
