Spicy Chorizo Sausage Wrap

These wraps are packed full of flavor thanks to zesty chorizo, but you can change it up a bit with your favorite sausage variety. You can also use bulk sausage, out of its casing, if you like. Just brown the sausage in a hot pan, no beer or water necessary.

Ingredients

    4spicy chorizo sausage links (about 1 lb)
    1/2 cupbeer or water
    4flour tortillas, 10 to 12 inches, warmed
    1/2 cuplow-fat sour cream
    1red or green bell pepper, thinly sliced (about 1 cup)
    1 cupsliced spinach leaves
    1tomato, chopped (about 1/2 cup)
    1/4 mediumwhite onion, thinly sliced (about 1/2 cup)
    4 ouncespepper Jack cheese, shredded
    1 tablespoonred wine vinegar

Method

Heat a large skillet over medium-high heat. Put sausage in pan and cook, turning occasionally, until browned, about 7 minutes.


Add beer and cover, cooking until sausages are firm to the touch and just cooked through, about 8 minutes.


Remove the lid and cook until liquid evaporates and sausages are nicely browned, about 7 more minutes.


Transfer sausage to a cutting board to cool slightly, then slice into about 1/2-in coins.


Meanwhile, in a medium bowl, combine pepper, onion, tomato and vinegar. Toss to combine.


Spread each warm tortilla with 2 tablespoons sour cream.


Evenly divide the sausage among each tortilla, then top with pepper mixture.


Sprinkle with cheese (about 1/4 cup per wrap) and roll as you would a burrito.
