These meatballs are hearty enough to be served without pasta. Instead, simply spoon them into a bowl, along with their sauce, and serve with a simple green salad for dinner.

Method
Stir 1/2 cup water and bulgur together in a large bowl and set aside to let sit for 30 minutes.
Preheat the oven to 500°F.
When bulgur has absorbed the water, combine with beef, onions, garlic, cumin, salt, black pepper, cayenne pepper, and egg whites and mix well with your hands.
Form into 12 meatballs, then arrange them in a shallow baking dish.
Bake until meatballs just start to brown, about 15 minutes.
Combine tomato sauce and 1/2 cup water in a bowl, then pour over meatballs.
Reduce oven temperature to 350°F and continue baking, uncovered, basting meatballs with tomato sauce occasionally, until meatballs are done and sauce has thickened slightly, about 30 minutes more. Serve hot.
