Spicy Noodle Salad

This chilled salad of noodles and crisp bell peppers tossed in a sesame oil-rice vinegar dressing provides a quick side dish or light meal. Great for make-ahead lunches too.

Ingredients

    2 tablespoonsbrown rice vinegar
    2 tablespoonsmirin
    1 tablespoonhot pepper sesame oil
    1/8 teaspoonfine sea salt
    1/2 pounddried udon or soba noodles
    2 tablespoonschopped fresh flat-leaf parsley
    1 tablespoonsesame seeds, lightly toasted
    1green onion, thinly sliced
    1 mediumred bell pepper, cored, seeded, and chopped

Method

In a small bowl, combine vinegar, mirin, oil and salt and whisk together to make a dressing. Set aside.


Cook noodles according to directions on package. 


Drain and rinse well and transfer to a large bowl. 


Add parsley, sesame seeds, green onion, bell pepper and reserved dressing and toss gently to coat. Serve chilled.
