Ingredients

    3/4 cupbrown mustard seeds
    3/4 cupyellow mustard seeds
    1 cupwhite wine vinegar
    1 cupdry white wine
    1/4 cupextra-virgin olive oil
    1/4 cupsugar
    2 tablespoonspowdered mustard
    1 tablespoonfine sea salt
    1 teaspooncrushed red chile flakes
    1/2 teaspoonground black pepper

Method

In a medium sized bowl, combine mustard seeds, vinegar, wine, oil, sugar, powdered mustard, salt, chile flakes and pepper.


Stir well, cover and set aside at room temperature, stirring once or twice, for 24 hours.


Transfer to a food processor and purée until creamy.


Transfer mustard to jars, seal tightly and refrigerate.
