Stuffed Cheeseburgers

Beefy burgers stuffed with sautéed onions and bell peppers are ideal for the summer grilling season. Toast the buns on the grill, too, if you like.

Ingredients

    2 teaspoonsextra-virgin olive oil
    1 largeyellow onion, finely chopped
    1 largegreen bell pepper, finely chopped
    3 poundslean ground beef
    2eggs, slightly beaten
    3 tablespoonsWorcestershire sauce
    1/2 teaspoonfine sea salt
    6 tablespoonsketchup or chile sauce
    2 teaspoonsfinely chopped fresh oregano
    6thick slices sharp Cheddar
    6hamburger buns
    1tomato, sliced
    6butter lettuce leaves
    1/4 teaspoonground black pepper

Method

Heat oil in a skillet over medium heat.


Add onion and pepper and cook until tender, about 8 minutes.


In another bowl, combine beef, eggs, Worcestershire, salt and pepper.


Mix lightly and shape into 12 thin patties.


Spoon onion and pepper mixture onto centers of 6 patties and top each with 2 tablespoons ketchup or chili sauce and a bit of oregano.


Cover with remaining patties and pinch the sides securely closed; place in refrigerator until ready to cook.


Prepare a grill for medium heat cooking.


Grill burgers until cooked to your desired doneness, about 5 minutes per side for medium.


Top with a slice of cheese when you're just about done; cover the grill to melt the cheese.


Serve burger on bun with tomatoes, lettuce and the condiments of your choice.
