Summer Sausage Sauté

Combine your favorite sausage with a sauté of fresh onions, bell peppers and zucchini, then serve over polenta for a quick and satisfying meal that looks as good as it tastes. For this dish, use packaged, pre-cooked sausage and a packaged roll of polenta.
Ingredients
  • 2 tablespoons extra-virgin olive oil
  • 1/2 cup chopped red onion
  • 1 large zucchini, chopped
  • 1 large red bell pepper, seeded and sliced
  • 1 (12.0-ounce) package cooked pork or turkey sausage, any flavor, sliced
  • 1 (18.0-ounce) package premade polenta, cut into 1/2-inch slices

Method

Heat oil in a large skillet over medium heat. Add onions, zucchini and red peppers and cook for 5 minutes.

Add sausage and continue to cook for an additional 5 to 7 minutes, stirring often, until sausage is browned.

Heat polenta according to package directions, sautéing, baking, or broiling it, as desired.

To serve, spoon sausage and cooked veggies over polenta and serve.
