Simple to prepare, colorful and flavorful, this salad combines sweet corn, tender black beans, crisp red peppers and zesty cilantro in a simple lime and rice vinegar dressing.

Ingredients

    1 can (15.25-ounce)whole kernel sweet corn, drained
    1/2 mediumred onion, finely chopped
    2 tablespoonsseasoned rice vinegar
    1/4 cupextra-virgin olive oil
    2 tablespoonslime juice
    3/4 teaspoonkosher salt
    1/2 teaspoonground black pepper
    2 packages (13.4-ounce)no-salt-added black beans, rinsed and drained
    1red bell pepper, cored, seeded and chopped
    1/2 cupfresh cilantro leaves, finely chopped
    1 clovegarlic, minced
    1 mediumavocado, diced (optional)

Method

In a large bowl, whisk together vinegar, lime juice, garlic, salt and pepper. Slowly whisk in olive oil.


Add beans, corn, onion, bell pepper, avocado (if using) and cilantro and toss until just incorporated. Cover and chill for about 2 hours.
