Sweet Potato Waffles

Sweet Potato Waffles

These tender waffles are a great way to use leftover mashed sweet potatoes. Simply purée in a blender or food processor, or use canned sweet potato purée instead. To turn these into a savory breakfast treat, add diced ham or smoked salmon.

Ingredients

    1 1/2 cupswhole wheat pastry flour
    1/4 cupcornstarch
    2 tablespoonsfirmly packed dark brown sugar
    2 teaspoonsbaking powder
    1/2 teaspoonfine sea salt
    1/4 teaspoongrated nutmeg
    1 cupsweet potato purée
    1 cupbuttermilk
    4 tablespoonsunsalted butter, melted
    2eggs
    1/2 cupdiced thinly sliced ham or 1/2 cup diced smoked salmon (optional)
    Canola spray oil

Method

Preheat a waffle iron.


In a medium bowl, whisk together flour, cornstarch, brown sugar, baking powder, salt and nutmeg.


In a large bowl, whisk together sweet potato purée, buttermilk, melted butter and eggs.


Add flour mixture to sweet potato mixture and stir just until evenly blended. Fold ham or smoked salmon, if using, into batter.


Lightly coat a waffle iron with spray oil. For each waffle, spoon about 1/3 cup batter onto the waffle iron (the quantity will depend on the waffle iron).


Close the lid and cook according to the manufacturer’s instructions. Repeat with remaining batter.
