Tangy Coleslaw with Dried Cranberries and Walnuts

If possible, prepare this coleslaw ahead of time and refrigerate it for a few hours before serving to let the flavors come together. Serve alongside Apple Cheddar Quesadillas, if you like.

Ingredients

    1/4 cupmayonnaise
    2 tablespoonslemon juice
    1 tablespoonsugar
    1/4 teaspoonfine sea salt
    1 package (10-ounce)shredded cabbage coleslaw mix
    1 largecarrot, grated
    2green onions, thinly sliced
    1/3 cupdried cranberries
    1/4 cupchopped walnuts (optional)

Method

In a small bowl, whisk together mayonnaise, lemon juice, sugar, salt and 2 tablespoons water. 


Add cabbage mix, carrots, green onions, cranberries and walnuts and toss well to coat.
