Ingredients

    1/2 cupdried minced onion
    1/4 cupdried parsley
    1/4 cupdried tarragon
    2 teaspoonsgranulated garlic
    3dried bay leaves
    2/3 cupdried black beans

    2ribs celery, chopped
    1 package (48-ounce)low-sodium chicken croth
    Tarragon Bean Soup Mix (above)
    2 teaspoonsfine sea salt
    1/4 teaspoonground black pepper
    1yellow onion, chopped
    2/3 cupdried black-eyed peas
    2/3 cupdried cannellini beans
    2/3 cupdried pinto beans
    2/3 cupdried kidney beans

Method

Add onion, parsley, tarragon, garlic and bay leaves to a quart-size jar. 


Add beans in layers. Close with a tight-fitting lid and store in a cool, dry place. Package for gift giving with our downloadable gift tag.


To make the soup:

Heat oil in a large pot over medium-high heat. Add carrots, celery and onion and cook, stirring occasionally, until golden brown, about 10 minutes. Add broth, 6 cups water and soup mix and bring to a boil. Cover, reduce heat to medium-low and simmer until beans are tender, about 3 hours. Discard bay leaves and stir in salt and pepper.
