Toaster Oven Pita Melts

It's hard to beat these wholesome melts for an easy-to-assemble snack. Serve one pita round with a fresh green salad for a light lunch. If you don't have a toaster oven, simply follow the instructions in your regular oven.

Ingredients

    2(6-inch) whole wheat pitas
    1 teaspoonextra-virgin olive oil
    1 cupgrated part-skim mozzarella cheese
    1/4 smallred onion, sliced thin
    1/4 cuppitted Kalamata olives
    2 tablespoonschopped fresh herbs such as parsley, basil or oregano

Method

Preheat the toaster oven to 425°F.


Lightly brush 1 side of each pita bread with oil.


Warm pita in toaster oven for one minute. Remove from toaster and spread mozzarella over pitas.


Top with red onion and olives.


Return to the toaster oven. Bake until heated through and cheese is fully melted, 5 to 7 minutes.


Scatter herbs over pitas, and cut into wedges and serve.
