Tomato and Cheddar Soup

Classic tomato soup is made even better with the addition of cheddar cheese, a pairing that gives a nod to grilled cheese sandwiches. Add cheddar crackers for garnish, if you like.

Ingredients

    1 tablespoonextra-virgin olive oil
    1/3 cupfinely chopped celery
    1/2 cupfinely chopped yellow onion
    2 clovesgarlic, chopped
    1 can (28-ounce)diced tomatoes, undrained
    2 cupslow-sodium chicken or vegetable broth
    1/2 teaspoonfine sea salt
    1/8 teaspoonground black pepper
    1 teaspoonsugar
    1 1/2 cupsgrated cheddar cheese
    1/4 cuphalf-and-half or milk
    1 tablespoonbutter
    Cheddar crackers for garnish

Method

Heat olive oil over medium heat in a medium pot. 


Add celery, onions and garlic and cook, stirring occasionally, for 3 to 4 minutes.


Add tomatoes, broth, salt, pepper and sugar. 


Simmer for 8 to 10 minutes. 


Remove from heat and stir in cheese, half-and-half and butter. 


Ladle soup into bowls, top with cheddar crackers and serve.
