Tuna and Garbanzo Bean Salad With Gazpacho

This complete meal packs a protein punch thanks to the garbanzo beans and tuna. Serve with a glass of chilled white wine, if you like.

Ingredients

    1 can (15-ounce)no-salt-added garbanzo beans, drained and rinsed
    1 can (6-ounce)solid white albacore tuna
    1/2 mediumred onion, finely chopped
    2 tablespoonschopped fresh parsley
    1/3 cupprepared balsamic vinaigrette
    1 can (28-ounce)whole peeled tomatoes, with their liquid
    2 tablespoonsextra-virgin olive oil
    2 tablespoonsred wine vinegar
    2 clovesgarlic, finely chopped
    1 largecucumber, peeled, seeded and chopped
    1green or red bell pepper, chopped
    1 packagerice crackers or flatbreads

Method

Put beans, tuna, 1/2 cup of the onion, parsley and vinaigrette into a large bowl and toss together gently; set aside.


Put tomatoes, oil, vinegar and garlic into a blender or food processor and purée for 10 seconds.


Add water to thin, if desired, then transfer to a non-metal bowl.


Stir in cucumber, pepper and remaining 1/2 cup onion.


Cover and refrigerate for at least 1 hour.


Top crackers or flatbread with tuna salad.


Ladle soup into bowls and serve with crackers on the side.
