Turkey Bacon BLT Sandwiches

In this delicious riff on the classic BLT, turkey bacon lightens up the sandwich, while fresh spinach leaves stand in for the lettuce. But there’s no substitute for juicy, vine-ripened tomatoes!

Ingredients
- 1 teaspoon extra-virgin olive oil
- 3 slices turkey bacon
- 2 teaspoons unsalted butter
- 2 slices whole grain bread, lightly toasted
- 4 spinach leaves
- 2 slices tomato
Method
Heat oil in a large skillet over medium-high heat.
Add bacon and cook, turning once, until crisp, about 6 minutes.
Remove from the skillet and arrange on a paper-towel-lined plate.
Spread butter on one side of bread slices.
Layer bacon, spinach and tomato slices on buttered side of one bread slice.
Top with remaining bread, buttered-side down, and serve.
