Turkey Burgers With Cucumber-Pineapple Relish

Burgers are an excellent way to enjoy ground turkey. We top these Asian-inspired burgers with a tangy fruit relish for a change to the standard fare.

Ingredients

    <b>Relish</b>
    1/3 cupseasoned rice vinegar
    1 teaspoonhoney
    1 tablespoongrated fresh ginger
    3 tablespoonslime juice
    1jalapeño pepper, seeded and finely chopped
    1/2 cupfresh cilantro, chopped
    1/2English cucumber, chopped
    2 cupschopped fresh pineapple
    1/2red bell pepper, seeded and chopped
    1/2red onion, finely chopped
    <b>Burgers</b>
    1 can (8-ounce)sliced water chestnuts, drained and finely chopped
    3 tablespoonshoisin sauce
    1/2 teaspoonsesame chile oil
    4green onions, thinly sliced
    4 clovesgarlic, chopped
    1/4 teaspoonpowdered mustard
    3 tablespoonschopped fresh cilantro
    1 1/2 poundslean ground turkey
    Olive oil cooking spray
    6whole wheat hamburger buns, split and toasted
    6 largelettuce leaves

Method

To prepare the relish, toss all ingredients together in a large bowl. 


Set aside, or make ahead and chill until ready to use.


For the burgers, mix together water chestnuts, hoisin sauce, oil, green onions, garlic, mustard and cilantro in a large bowl. 


Add turkey and mix together with a fork until just combined. 


Form turkey mixture into 6 patties.


Spray a large skillet or grill with cooking spray and heat over medium high. 


Cook burgers, flipping once, until cooked through and golden brown, 6 to 7 minutes per side. 


Transfer burgers to toasted buns and top with lettuce and relish.
