Method
Make a roux by melting butter in a heavy-bottomed saucepan, stir in flour and cook, stir occasionally, for 4 to 5 minutes. Set aside.
In a saucepan bring stock, thyme sprigs and pan drippings to a boil.
Reduce heat to a simmer.
Whisk roux into simmering stock, being careful to stir out any lumps.
Over low heat, cook gravy about 10 minutes until it has reached desired thickness.
Season with sea salt and pepper to taste, strain and serve.
