Turkey Meatloaf

This delicious meatloaf uses whole grain cereal in place of the standard bread crumbs. Tomato paste gives this dish a colorful tint and the herbs add great flavor.

Ingredients

    Olive spray oil
    1 cupKAMUT® khorasan wheat or quinoa flakes cereal, crushed
    2 poundsground turkey (a mix of light and dark meat)
    1 cupsliced green onions
    1celery stalk, finely chopped
    1 smallyellow onion, finely chopped
    2 clovesgarlic, finely chopped
    1 can (6-ounce)tomato paste
    1egg, lightly beaten
    1/2 teaspoondried thyme
    1/2 teaspoondried marjoram
    1/2 teaspoondried oregano
    1/2 teaspoondried basil
    1 teaspoonfine sea salt
    1/4 teaspoonground black pepper

Method

Preheat the oven to 400°F. 


Coat an 8-inch loaf pan with spray oil and set aside. 


In a large bowl, gently combine cereal, turkey, green onions, celery, yellow onion, garlic, tomato paste, egg, thyme, marjoram, oregano, basil, salt and pepper. 


Transfer turkey mixture to the prepared pan and bake for 60 to 75 minutes, until internal temperature of meatloaf reaches 165°F. 


Set aside to let cool briefly, then slice and serve.
