Tzatziki

Creamy tzatziki is the perfect topping for Greek-Style Veggie Burgers. We also love it tucked into a pita sandwich with plenty of veggies. If making ahead of time, be sure to stir to redistribute any accumulated juices before serving.

Ingredients
- 1 cucumber, peeled, seeded and grated
- 1 teaspoon fine sea salt
- 1 cup plain nonfat Greek yogurt
- 2 cloves garlic, finely chopped
- 1 tablespoon extra-virgin olive oil
- 1 tablespoon lemon juice
- 1 teaspoon lemon zest
- 1 teaspoon chopped fresh mint and/or basil (optional)
Method
Place cucumbers in a bowl and sprinkle with salt.
Let sit 15 minutes, then drain excess water.
Mix drained cucumbers with yogurt, garlic, olive oil, lemon juice and zest.
Add salt and pepper to taste.
Stir in herbs if using.
Refrigerate until ready to enjoy.
