Vanilla Quince Purée

Quince looks like a cross between an apple and a pear, and because the fruit’s flesh is tart, it’s delicious when simmered until very tender with a little sugar and a vanilla bean. Once puréed, the rose-colored mixture is reminiscent of an elegant applesauce.

Ingredients

    1vanilla bean
    2 poundsquince, peeled, cored and cut into 1-inch pieces
    1/2 cupsugar

Method

Slice vanilla bean lengthwise and scrape seeds into a large saucepot.


Add vanilla bean pod, quince, 1 cup water and sugar, and bring to a boil.


Reduce heat to medium, cover and simmer until quince is very tender, about 20 minutes.


Remove from heat.


Transfer quince mixture to a blender or food processor. Purée until smooth. Serve warm or chilled.
