Ingredients

    2/3 cup(about 5 ounces) drained firm silken tofu
    1/4 cuplemon juice
    2 tablespoonswhite miso paste
    1 tablespoonwhite wine vinegar
    1 teaspoonDijon mustard
    2 clovesgarlic
    1/4 teaspoonground black pepper

Method

Combine tofu, lemon juice, miso, vinegar, mustard, garlic, pepper and 1/4 cup water in a blender and purée until smooth.
