Vegan Chocolate Ganache
Makes about 1 cup

Decadent and thick with a deep chocolate flavor, this smooth sauce will satisfy any chocolate lover. Use as a frosting or serve with fresh fruit.

Ingredients
- 3/4 cup pitted dates, soaked in warm water to cover for 10 minutes; reserve liquid
- 1/2 cup almond butter
- 1/2 tablespoon pure vanilla extract
- 3/4 cup unsweetened cocoa powder
Method
Place dates in a high-speed blender or food processor with 2 tablespoons of the reserved soaking liquid.
Add almond butter, vanilla and cocoa powder, and purée until smooth, adding 1 to 2 more tablespoons of the soaking liquid until the mixture becomes thick and smooth.
Refrigerate in an airtight container for up to 1 week or freeze for up to 2 weeks.
